Monday was a Civic Holiday in parts of Canada. It exists solely because there are no days off in August. This way... Long weekend! Love this place. My boyfriend and I decided to stop by our friend's for a little (tops an hour) and then go home, clean our condo, cook/photograph a post, and relax.
We were there for seven hours. Sucked in. We walked right into "Monday Funday", which consisted of a rooftop, a hose, Baggo, a stereo with surround sound, Caesars (above), beer, friends and lots of food. There was no escape.
I was convinced to stay after our good friend Ken said he would help me with an entry for the blog which would knock off one thing on my "to do" list for that day. He had the cheese, the sausage, the milk, flour, and salt. Thanks to our friend Lori, we also had baking powder. Cheddar and sausage biscuits were going to happen.
To make the process faster so we could get back to the sun, Ken, our guest chef, helped me prepare these. He was also crafty and grabbed our leftovers from the night before - which was taco night - and made an awesome steak sandwich. It really was an excellent, and quick, dinner.
These biscuits take no time; half an hour all in. This is something you can always throw together and know that it's going to be stress free. Someone even recommended making these as the carb in an eggs benedict. Brilliant.
Thanks to fine friends, quick food, and an outstanding point and shoot camera, I was able to enjoy my Civic Holiday and get work done at the same time. Thanks again to all who were involved and a special thanks to Chef Ken.
Cheddar and Portuguese Sausage Quick Biscuits
Makes 8 small biscuits
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1 tsp salt
3/4 cup whole milk, plus more for brushing over tops
3/4 cup Portuguese sausage or Chorizo, diced small
3/4 cup marble or medium cheddar, diced small
Preheat oven to 450 deg. Prepare a baking sheet with parchment paper, or in my case where I didn't have any, use tin foil misted with cooking spray.
In a large bowl, mix the flour, baking powder, and salt until the mixture is uniform. Add the milk and mix with your fingers until the dough comes together.
Add the sausage and cheddar and knead into the dough. Turn out onto your work surface and flatten it out into a rectangle shape about 1 1/2 inches thick. Cut into 8 pieces and lay on the prepared baking sheet. Brush the tops with a little bit of milk.
Bake on the middle rack for 15 minutes or until they start to get golden brown around the top and bottom edges. Serve warm with butter... or steak sandwiches.
